Toasted Benne Wafers

Sesame, brown sugar, butter, thin and crisp.

Where this comes from

Benne seed came over with enslaved Africans and was planted at field edges for luck.

Ingredients

  • 1 cup toasted benne (sesame) seeds
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1 egg
  • 3/4 cup flour
  • 1/2 tsp baking powder
  • 1 tsp vanilla
  • Pinch salt

Method

  1. 011. Toast seeds in a dry pan until fragrant. Cool.
  2. 022. Cream butter and sugar, beat in egg and vanilla.
  3. 033. Fold in flour, baking powder, salt, and seeds.
  4. 044. Drop teaspoons far apart on parchment; they spread.
  5. 055. Bake 350F for 8-10 minutes until lace-edged. Cool fully to crisp.
