Doro Wat

Slow onions, berbere, chicken, and scored eggs.

Where this comes from

Doro wat is the celebration dish of the Ethiopian table, served on injera and eaten communally.

Ingredients

  • 4 large onions, finely chopped
  • 1/2 cup niter kibbeh
  • 1/2 cup berbere
  • 8 chicken drumsticks
  • 6 hard-boiled eggs
  • 4 cloves garlic, 1 tbsp ginger
  • 2 cups stock
  • Salt

Method

  1. 011. Cook onions dry in a heavy pot 40 minutes until collapsed.
  2. 022. Add niter kibbeh, garlic, ginger; cook 10 minutes.
  3. 033. Add berbere and cook 10 minutes until it darkens.
  4. 044. Add chicken and stock, simmer 1 hour.
  5. 055. Score eggs, add for the last 15 minutes. Serve on injera.
