Doro Wat
Slow onions, berbere, chicken, and scored eggs.

Where this comes from
Doro wat is the celebration dish of the Ethiopian table, served on injera and eaten communally.
Ingredients
- 4 large onions, finely chopped
- 1/2 cup niter kibbeh
- 1/2 cup berbere
- 8 chicken drumsticks
- 6 hard-boiled eggs
- 4 cloves garlic, 1 tbsp ginger
- 2 cups stock
- Salt
Method
- 011. Cook onions dry in a heavy pot 40 minutes until collapsed.
- 022. Add niter kibbeh, garlic, ginger; cook 10 minutes.
- 033. Add berbere and cook 10 minutes until it darkens.
- 044. Add chicken and stock, simmer 1 hour.
- 055. Score eggs, add for the last 15 minutes. Serve on injera.
