Egusi Soup

Ground melon seed thickened stew with greens.

Where this comes from

Egusi is a staple across West Africa, eaten with pounded yam or fufu.

Ingredients

  • 2 cups ground egusi seeds
  • 1/2 cup red palm oil
  • 2 lb beef or goat, cooked with stock
  • 1 lb spinach or bitterleaf
  • 2 onions
  • 3 scotch bonnets
  • 2 tbsp ground crayfish
  • Stock cubes, salt

Method

  1. 011. Heat palm oil, fry onion and pepper blend 10 minutes.
  2. 022. Stir egusi into the oil and fry until it clumps and toasts.
  3. 033. Add stock gradually, simmer 25 minutes so the seed cooks through.
  4. 044. Add meat and crayfish, simmer 10 minutes.
  5. 055. Fold in greens for the last 5 minutes.
