Browned Oxtail with Butter Beans
Seared hard, braised three hours, finished with beans.

Where this comes from
Oxtail was a cast-off cut given to Black cooks and turned into one of the richest dishes in the Caribbean canon.
Ingredients
- 3 lb oxtail
- 2 tbsp browning or dark soy
- 1 onion, diced
- 4 cloves garlic
- 1 tbsp allspice
- 4 sprigs thyme
- 1 scotch bonnet
- 2 tbsp tomato paste
- 1 can butter beans
- 4 cups beef stock
Method
- 011. Season oxtail overnight with garlic, thyme, allspice, and browning.
- 022. Sear hard in a heavy pot until deeply browned.
- 033. Add onion and tomato paste, cook 5 minutes.
- 044. Add stock and scotch bonnet, cover, braise 3 hours until falling apart.
- 055. Add butter beans in the last 20 minutes. Skim fat, serve over rice.
